Our family enjoyed a vacation to the beach over Easter. It was such a special time to laugh together, rest and reflect! We got home about 12:30 am last night and are currently knee-deep in laundry, but I wanted to share one of our all-time favorite flour-less cookie recipes. It only has 5 simple ingredients and my kids can’t tell that it doesn’t have flour. They are kid tested and approved. Give them a try. I adapted this recipe from Sally’s Baking Addiction. This recipe has only 5 ingredients: almond butter, baking soda, brown sugar (or maple syrup) 1 egg beaten, and of course chocolate chips! It is a quick and simple recipe.
You can substitute 1/4 cup maple syrup in place of the brown sugar.
The almond butter needs to be at room temperature.
Scoop the dough onto prepared baking sheet. Bake at 350 for 8 to 10 minutes. The cookies will look very soft and under baked, that is good, but allow the cookies to cool for 10 minutes on the baking sheet before transferring to a wire rack to cool completely.
