Aretha Frankensteins is a local favorite in Chattanooga, Tennessee. Our kids absolutely adore these sky-high pancakes! What’s not to love? They are huge and a perfect mix of hearty corn flavor and sweet, buttery pancake. Plus, you can eat breakfast all day! After visiting the Aquarium, this is always a great place to stop for lunch. So last week, we decided to make a copycat recipe of these insanely great pancakes! After doing some research online, I found a recipe on Julie’s blog that we used and adapted; we really only added flax meal and traded out her canola oil for coconut oil.
